English Muffin Pizzas

English Muffin Pizzas are a treat my mom use to make for my brother and I when we were kids. This week JV and I had a good time making them for lunch. My son is what my mom would have called “a good eater”. My niece on the other hand is a bit more pickier. She is a little more of a snacker. What I learned when my nieces came for a visit is kids are better eaters when they get to pick the ingredients and make their own meals.

What you will need:
English Muffins (lightly toasted)
Cheese
Pizza toppings
Sauce: Spaghetti Sauce, Pizza Sauce, Alfredo Sauce and/or Ranch Dressing.

Directions:
Preheat oven to 350 degrees.
Prepare toppings: Cook any raw meets prior to baking.
Chop other ingredients
1. Spread sauce on each English muffin half.
2. Add cheese
3. Add toppings
4. Bake in preheated oven on a greased cookie sheet for 10 minutes.

Once the kids have made their pizzas you can mix all the left over ingredients to make a delicious taco salad for your lunch.
