Banana Bread Peanut Butter Honey Sandwich Bites

Looking for a fun treat to take on a picnic or a neighborhood block party. Look no further. Try my Banana Bread Peanut Butter Honey Sandwiches. This can be as simple or complicated as you like. You can make you own bread, harvest your own honey and grind your own peanut butter or you can buy it all prepackaged and put it all together. I love the smell of bread baking in the oven. So I make the bread and leave the honey and peanut butter up to the professionals. 🙂

First make your favorite Banana Bread recipe. Mine is modified version of the Banana Bread **Cockaigne from the Joy of Cooking 75th Anniversary edition.
Preheat oven to 350’F
Mix Together:
1 1/2 cups all-purpose four
1 1/2 teaspoons baking powder
1/2 teaspoon salt
**2 teaspoons cinnamon

Beat in a large bowl at medium speed until creamy
2/3 cup sugar
**1/2 stick of soften butter
**1/4 cup sour cream


Beat in:
2 large eggs, beaten
1 1/4 cup mashed bananas
**2 teaspoon vanilla

**Omitted Fruit and Nuts

Add dry ingredients in about 3 parts, beating until smooth after each addition.

Scrap batter into greased 8 1/2 x 4 1/2 loaf pan. Bake for 1 hour or until a toothpick inserted in center comes out clean.

Once the bread has cooled cut in to slices.
Spread peanut butter and honey on one side and place a second slice on top. This can be served as a small sandwich or cut into small squares for a dessert or treat.

*Cockaigne (pronounced caw-cane) was a favorite recipe in the Rombauer household. The word cockaigne was a term of endearment in the cookbook and was tacked onto various recipes throughout the Joy of Cooking as a way to signify the absolute personal favorite recipes of the Rombauer clan.
