Banana Bread French Toast

First make your favorite Banana Bread recipe. Mine is modified version of the Banana Bread **Cockaigne from the Joy of Cooking 75th Anniversary edition.


Preheat oven to 350’F
Mix Together:
1 1/2 cups all-purpose four
1 1/2 teaspoons baking powder
1/2 teaspoon salt
**2 teaspoons cinnamon

Beat in a large bowl at medium speed until creamy
2/3 cup sugar
**1/2 stick of soften butter
**1/4 cup sour cream


Beat in:
2 large eggs, beaten
1 1/4 cup mashed bananas
**2 teaspoon vanilla

**Omitted Fruit and Nuts

Add dry ingredients in about 3 parts, beating until smooth after each addition.

Scrap batter into greased 8 1/2 x 4 1/2 loaf pan. Bake for 1 hour or until a toothpick inserted in center comes out clean.

Once the bread has cooled cut in to slices.

French Toast Recipe (4 servings)

1 egg
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 cup milk

Soak banana bread in milk and egg mixture allowing egg mixture to penetrate thoroughly, flipping the bread once.

Once bread has soaked cook on a hot skillet until golden brown on each side, flipping once.

Serve warm with butter and syrup.
