In a cast iron skillet brown:
2 lbs ground beef or ground turkey

Mix in:
2 gloves of minced garlic
1 medium chopped yellow onion
1 can undrained black beans
1 can undrained diced tomatoes (optional)

In small bowl mix:
4 Tablespoons sugar
1 cup P.A.N. corn meal
Once combined mix in:
1/2 cup margarine or soften butter
Mix until crumble forms

Add a layer of:
1 cup chopped cilantro,
next, 1/2 seeded minced jalapeno
next, 1/2 cup shredded cheddar cheese
next, the corn meal crumble
and last 1/2 cup shredded cheddar cheese

Bake cast iron skillet at 350 degrees for 30 minutes. Serve hot.
